Phytochemicals and Antioxidant Properties of Enteromorpha prolifera Extract in Korea

Abstract
Enteromorpha prolifera (EP) in Korea contains an abundance of phytochemicals such as vitamins, phycocyanin, chlorophyll, flavonoids, and phenolic compounds. The first purpose of this study was to evaluate the antioxidant activities of three extracts added with ethanol and fractionated with distilled water or ethyl acetate, respectively. The second purpose was to analyze the bioactive compounds of EP by liquid-chromatography mass spectrometry (LC/MS). The phycocyanin, chlorophyll, flavonoid, and total phenolic compound contents of EP extract with ethyl acetate (EPEA) were the highest among all extracts. For the antioxidant properties of EPEA, the EC50, IC50, and IC100 values were 24.9, 5.4, and 5.9 mg/mL, respectively. Based on these results, EPEA had the highest antioxidant activities compared to EP extract with distilled water and ethanol. In addition, the main bioactive compound of EPEA was analyzed by LC/MS and classified by library researching. In the LC/MS analysis, the bioactive compounds in EPEA were determined in order of decreasing amount to be carotenoid-derived dihydroactinidiolide, canthaxanthin, and methionine-derived dimethylsulphoniopropionate. In conclusion, these results suggest that EPEA, which has many bioactive phytochemicals and high antioxidant activity, is a potential healthy and functional food.
